I make this pesto with spearmint and it is fabulous on hot or cold pasta. I know mint pesto sounds weird, but try it, it’s wonderful.


Fresh spearmint, basil, parsley or cilantro
Pine nuts
2 cloves garlic
Salt and pepper to taste
Olive oil

Pick, wash and de-stem large batch of fresh spearmint or herb of your choice.

In food processor or blender, chop mint, handful of pine nuts garlic, salt and pepper then add olive oil until smooth paste.

Store or freeze in clean tight container. If store in the fridge, drizzle thin layer of olive oil on top to prevent browning.

Serve on pasta, sandwiches or veggies.
