We use our own key limes and spearmint in this recipe and it is wonderful on greens or try it as a marinade.


2/3 c. light virgin olive oil
1/3 c. red wine vinegar
1 t. dijon mustard
Fresh lime juice to taste
1 t. honey or to taste
1/2 clove garlic, minced
Salt and cracked pepper to taste
2 T. chopped fresh spearmint

Whisk together all ingredients. Store in covered container and shake well before serving. Makes I cup.
